Not in a university department or a state institute, but in a laboratory on the grounds of a Copenhagen beer factory, paid for by a brewer who had decided that understanding fermentation properly mattered more than keeping the knowledge to himself. Carlsberg straddles the boundary between Valby and Vesterbro, roughly 2.4 kilometres from City Hall Square, and for 161 years it was where Danish beer came from. The first brew finished on 10 November 1847. The last ran off on 30 October 2008. What remains is 33 hectares of improbably ornate industrial architecture, slowly turning into a neighbourhood.]]></description>
